Just a regular roaster chicken, coated in a lemon bbq sauce, and slow cooked until done. This frees up the oven for some great side dishes to serve with it! You won’t find an easier way to make a roaster chicken than this recipe! I honestly was always intimidated to make a roaster chicken at home, I usually just bought rotisserie chickens already made at Costco or the grocery store. I’m not sure why I waited so long to make it at home, but it’s super simple and quick to get it started. The Crockpot does all the work for you with this recipe! You can serve this homemade rotisserie chicken with extra warmed bbq sauce, but it really comes out super moist anyway. I like drizzling a bit of the extra bbq-lemon broth that collects at the bottom of the slow cooker. It tastes great drizzled over mashed potatoes too! What’s in this recipe? You’ll need just 4 ingredients: Any brand of whole roaster chicken will do! How to make this recipe: Cut lemons in half, squeeze the juice into one bowl, and place the used lemon halves in another bowl. 2. Stir in BBQ sauce and set mixture aside. 3. Place roaster chicken in the Crockpot and pat dry with a paper towel. 4. Place reserved lemon halves and whole garlic cloves into the cavity of the chicken. 5. Spread BBQ sauce-lemon juice mixture over the top of the chicken. Cover and cook. 6. Remove cover and check temperature in several places to make sure chicken is cooked through. Allow chicken to rest a few minutes before slicing and serving! Can a frozen roaster chicken be used? You can use a frozen whole chicken, but you’ll need to allow it to thaw before cooking it in the Crockpot. What kind of bbq sauce should I use? Your favorite bbq sauce will be just fine in this recipe. Pro tips: Be sure to remove any giblets or extra included chicken pieces that are inside the roaster chicken before cooking. You can just discard these! Use the bbq sauce-lemon broth that collects at the bottom of the slow cooker to further moisten the chicken Squeeze and roll the lemons a few times before slicing and squeezing the juice out – this gets the juices flowing inside the lemon!
