Slow Cooker Scalloped Potatoes are the perfect holiday side dish! Thin sliced potatoes, thick cut bacon, cheese, and condensed soup. Yum! I’ve found my newest favorite side dish for the big holiday meal this year: Slow Cooker Scalloped Potatoes! Rich, cheesy, BACON-Y, and so good! I love how slow cooker side dishes free up the oven for valuable space as well. I used my favorite Wright® Brand Hickory Smoked Bacon for these amazing scalloped potatoes. The flavor is amazing, and I just love using thick cut bacon in slow cooker recipes; it really infuses the bacon flavor throughout the dish. I grabbed a package of Wright Brand Bacon and a package of Jimmy Dean® Roll Sausage during my last trip through Giant while grocery shopping. No, the bacon gets diced and cooks along with the rest of the ingredients directly in the slow cooker. This allows the bacon flavor to really enhance the recipe! What kind of potatoes are used in this recipe? I like to use russet potatoes because they are hearty and hold up well to the heat of a slow cooker. How do I slice the potatoes thinly? I like using my food processor’s slicing disk for jobs like this. You could also use a handheld mandolin slicer. How to make slow cooker scalloped potatoes: In the bottom of a slow cooker, layer half of the sliced potatoes, half of the chopped onion, and half of the diced Wright bacon. Top with half of the cream cheese and shredded cheese. Top the cheese with condensed cream of chicken soup. Cover and cook. After cooking, remove lid and stir well to incorporate ingredients. Serve hot! How do you serve slow cooker scalloped potatoes? It’s best to serve these directly out of the slow cooker! Less dishes to clean up afterwards, and the slow cooker’s “keep warm” setting keeps the potatoes at the perfect serving temperature.
