Cornbread mix topped with corn, sloppy joe beef, and shredded cheese! When I think of filling, hearty meals for the family, Sloppy Joe Cornbread Casserole always comes to my mind! Our boys absolutely LOVE cornbread, so incorporating it into a baked casserole is a total win for us. Casseroles like this one are perfect for get-togethers also! What kind of cornbread mix do I use? You can either use two 7 oz packages/pouches of dry cornbread mix, or a 15 oz box of cornbread mix. I’ve used both for this recipe and it turns out great either way. Do I mix the cornbread with the ingredients on the package first? No! Just use the dry mix and proceed with the recipe as written below. How to make Sloppy Joe Cornbread Casserole: Mix the dry cornbread mix with eggs and milk. Spread into the bottom of a greased baking dish. Bake for 20 minutes. Meanwhile, brown and drain ground beef. Mix in ketchup, mustard, brown sugar, and garlic powder. Remove partially baked cornbread from oven. Layer with drained corn, sloppy joe mixture, and shredded cheese. Return to oven to complete baking. Allow casserole to rest 5 minutes before serving! Do leftovers freeze well? Yes! Place leftovers in a plastic container with a lid before freezing. Allow to thaw before microwaving until hot. Joyce says August 21, 2018 at 9:31 am Could this be made up to the point of the final baking, and then still be all right a few hours later (if refrigerated)? I’d like to make this for our Sabbath dinner one Saturday, but it would have to be made on Friday before sunset, and then final baked on Saturday evening. It sure does read like a wonderful recipe, and I’d love to share it with 14 other brethren. Reply

rhea says June 17, 2019 at 5:00 pm My mom invented this when I was a kid only she didn’t add corn and we use sweet corn bread. Also after the cornbread is done baking you add a layer of cream cheese then top with sloppy joe and cheese then place in oven for cheese to melt. Or you could use Jalapeno cornbread with the cream cheese for that slightly spicy and sweet. Reply

Jane says October 18, 2021 at 10:28 pm Delicious! I cut the recipe in half since I don’t have a family to feed and as it’s filling I’m going to have to freeze some of it lol. I haven’t seen Jiffy mixes in my part of Canada in more years than I can remember so I ended up making my usual recipe for it. It was fairly quick to toss together even though I kinda messed up a bit – forgot to add the corn before placing the meat on….I just tossed some on top of the meat and sprinkled with cheese and it still came out very good. I was looking for something different to make to shake up the routine and I found a winner with this recipe! Thanks! Reply
