A hearty and fun soup for the whole family! Have you ever seen a more fun bowl of soup before in your life?? I think not! Just look at those adorable pasta letters! 🥰 I grew up eating the alphabet soup from a can, which was pretty much just tomato soup with pasta letters. Still fun, but no where near as delicious as this recipe. This is a great vegetable beef soup recipe with added pasta. A universal great tasting soup that I’d bet the whole family would be thrilled to have! What’s in this recipe? You’ll need basic beef vegetable soup ingredients, like ground beef, carrots, beans, beef broth, and seasonings. Of course you’ll also need the alphabet pasta! I typically use Great Northern beans or cannellini beans in this soup, but you could honestly use any sort of beans you have in your pantry. Kidney beans would taste great! Where can I buy alphabet pasta? I can usually find alphabet pasta in my local bulk foods store. Some national chain supermarkets carry it, but you can also pick it up on Amazon. If you can’t find it, you could use any small pasta like pastina or orzo. Both would work about the same! It would certainly not be nearly as fun without the letters, though!! 😅 How to make this recipe: Place the ground beef in a large soup pot. Cook the beef over medium high heat until completely brown. Drain the fat from the beef by transferring the cooked beef into a strainer or colander over your kitchen sink. Return the cooked beef back into the pot. Stir in the minced garlic and stir just until you begin to smell the garlic. 2. Add in 4 cups of the beef broth, sliced carrot, drained Great Northern beans, undrained diced tomatoes, dried minced onion, and Italian seasoning. Bring this mixture to a boil over high heat, this should take about 10 minutes. Then, stir and reduce the heat to low. Let the soup simmer for 40 minutes. 3. Test to make sure the carrots are soft by piercing with a fork – it should go in smoothly. If they are cooked, then add in the remaining beef broth and the alphabet pasta. 4. Cook on medium heat for another 10 minutes or until the alphabet pasta is cooked and tender. Allow the soup to cool slightly before serving. This is absolutely delicious! Can this soup be frozen? Yes! This is great to freeze individual servings for lunches or meals later on. Just freeze in serving containers, then thaw in the refrigerator overnight or in the microwave. Please note: because of the pasta, thawed soup will have more of a stew consistency. Add additional beef broth if desired. My kids actually love it this way! How many servings does this recipe make? I would say this makes 8 generous servings of soup. It is filling, too! We are a family of 6 and we all have plenty with one batch with quite a few lunch-sized servings leftover to put away. That is one of the many reasons why I just adore this soup! Can dried beans be used instead? Absolutely! Just prepare the equivalent amount of dried beans in advance and use it instead of the canned beans in the ingredients. I would think this would taste even better and also be more affordable since dried beans are cheaper at the store!
