Soup Week: Easy Lasagna Soup By Kelly Miller • November10,2012 • Updated April 10, 2018 • 13 Comments1.9K221 I can’t believe we’re already almost at the end of Soup Week! Here’s a recap of what was posted so far this week: Can Can Taco Soup Alphabet Soup Crockpot Loaded Baked Potato Soup Tomato Basil Parmesan Soup Simple Spinach Tortellini Soup and now, on to today’s soup… When I first started cooking at home more, this was one of the first recipes I was dying to try and I’m at a loss as to why it took me so long to finally give it a go! This soup seriously tastes like lasagna in a bowl. Probably better because I’m not one to make a whole pan of lasagna on a busy weeknight, how about you? I served this for dinner at my parents’ house and they all raved about it, too. Easy Lasagna Soup from Joyful Homemaking 1lb ground beef 28oz can diced tomatoes (in garlic & olive oil if you can find it), undrained 15oz jar pasta sauce, I used our favorite Francesco Rinaldi brand 2 cups beef broth 1 cup water 1 teaspoon Italian seasoning 2 1/2 cups bowtie pasta, cooked until just about done 1 cup mozzarella cheese Brown and drain ground beef in stock pot, and return to pot. Add tomatoes, pasta sauce, broth, water, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 15 minutes. Stir in cooked pasta and simmer an additional 5 minutes. Serve with crusty bread and mozzarella cheese. Linking up to these fabulous parties. Check them out! 1.9K221
