Everyone loves this soup! You won’t find a simpler way to make lasagna than this Easy Lasagna Soup recipe! I mean it! If you’ve tried making lasagna for your family, you know exactly the issue. It takes FOREVER to make a traditional lasagna. This soup is absolutely the perfect solution with the same flavor profile. Filled with ground beef, tomatoes, pasta, and topped with mozzarella. It’s much quicker from start to finish also – only about 30-40 minutes until this soup is ready to be served. Quick and easy soups like this one are perfect for busy weeknights at home. What’s in this recipe? All but two of these ingredients keep well in the pantry for a long time. So be sure to grab those ingredients to have on hand for a dinner solution when you can’t think of what to make! Use whatever your favorite brands are for these as well! You’ll also need a bit of shredded mozzarella cheese, not pictured above. How to make this recipe: Brown one pound of ground beef in a large pot over medium heat on a stove top. When it’s browned, drained the fat from the meat using a colander, and return the drained beef to the pot. 2. Add in the diced tomatoes, undrained, spaghetti sauce, beef broth, and Italian seasoning. Stir well. 3. Bring to a boil over high heat. Then, reduce the heat to a simmer and cook for 15 minutes. 4. Stir in cooked bow tie pasta to the soup. 5. Serve soup hot in bowls. Top bowls with a bit of shredded mozzarella cheese. I like to serve this with crusty, whole grain rolls. It’s perfect for dipping into the soup broth and makes this meal so much more filling. Though, I would say, the soup is plenty filling all on it’s own! Can frozen ground beef be used? Sure! Just thaw it overnight in the fridge, or use the microwave thaw function if you’re short on time. Fresh ground beef would taste the best in this soup, though. Is bow tie pasta the same as Farfalle pasta? Yes, it’s the same! I find that different brands call it one or the other on the front of the box. Can a different type of pasta be used? Sure! You could substitute the bow tie pasta for the same amount of rotini, cavatappi, or campanelle since those types are about the same size. Pro tips: Cook the bow tie pasta while the soup is simmering for 15 minutes and both will be done around the same time Add some crushed red pepper to spice it up a bit Look for diced tomatoes seasoned with garlic to further enhance the lasagna flavor Add a bit of shredded mozzarella cheese to the bottom of each bowl before ladling the soup into it and serving. Top with some more mozzarella to make this soup extra cheesy and delicious! Directions for leftovers: Store individual servings of leftover lasagna soup in plastic containers. The soup will keep for 3 days in the refrigerator. Reheat the soup in the microwave for 3 minutes. Add additional beef broth as needed to thin out leftovers as the pasta tends to continue to soak up the liquid in the soup. Freezer directions: Cool the soup completely and freeze in a large container, or individual single serving containers. Easy lasagna soup keeps for up to 3 months in the freezer safely. To thaw, refrigerate overnight. To thaw quickly, run the container until cool water to release it from the container and warm it up on the stove or in the microwave until hot. Add additional warmed beef broth to thin out soup as needed.
