Italian Dijon Pork Chops By Kelly Miller • March8,2021 • 5 Comments 379 4 Jump to Recipe Jump to Video These amazing Italian Dijon Pork Chops are such a great weeknight dinner! Made with boneless pork chops, green pepper, zesty Italian salad dressing, and Dijon mustard. Tangy and good! If you love Dijon mustard, this incredible pork chop dinner is perfect for your family! The boneless pork chops get covered in a sauce with just two ingredients: Dijon (of course!) and Zesty Italian salad dressing. I’m sure you can just imagine the tangy flavor now – it’s epic! Pork chops are such a great weeknight dinner. Quick and easy, too! Into the dish, top with slices of green pepper, and sauce poured over the whole dish. Yum! What’s in this recipe? Only 4 ingredients – yes you read that right! Can regular Italian dressing be used instead? Yep! You won’t have nearly the same jumpy flavor, but it will still be good if that’s all you can find. Can frozen green pepper be used instead of fresh? Also, yes! No need to thaw them either, just spread the frozen green pepper (sliced or diced works too) on top of the pork chops and bake as directed – they’ll thaw and cook right along with the chops! How to make this recipe: Core the green peppers, wash out any remaining seeds, and slice into rings. 2. In a medium sized bowl, whisk together the Zesty Italian salad dressing and the Dijon mustard. 3. Lay pork chops in a long baking dish. Spread green pepper rings on top and pour sauce over entire dish. Bake until the pork chops reach 145 degrees. Let casserole rest 5 minutes before serving! Freezer directions: Before baking: wrap casserole tightly with foil and freeze for up to 1 month. Thaw overnight in the refrigerator before baking as directed. After baking: freeze individual leftovers in plastic containers. Thaw in refrigerator and microwave until hot – this is great for lunches or last minute dinners! Pro tips: For smaller families, this recipe is easily halved if needed Serve these pork chops with steamed or roasted broccoli or cauliflower Green peppers can be omitted if they’re not your family’s thing!
