I will absolutely be the first one to admit that sometimes, when life gets super busy as it tends to do especially this time of year, I tend to get in a dinner rut. Pasta one night. Pizza, sandwiches, tacos. We usually do have sliced ham at least twice each week, but usually it’s on sandwiches. The most creative I get with ham sandwiches is switching up the bread for rolls or picking up kosher pickles. Real fancy I know! I feel like you wake up on Monday and it just drags. And then before you know it, Thursday rolls around and the week is just about done. Even though I’ve shared with you my tips on weekly menu and meal planning, because I honestly enjoy doing it, I still have to force myself to actually write it all down and get myself to the grocery store. It’s certainly not easy with a family and house and work to take care of! I am honestly in love with this dinner. It’s RARE that I make a dinner that consists of a meat and a vegetable side dish, certainly not during the week. This ham was WAY easier than even most dinners I prepare regularly. Ham goes in baking dish. Mix up the three-ingredient glaze and slather on ham. Cover and bake. DONE. I served this yummy ham along with some baked potatoes and it was more than enough for our family of four. In fact, I packed the leftovers up and we’ve been enjoying it through the week for lunch.
