I just love bake sales, don’t you? They’re so great for raising money quick for an organization. You can make it as simple or elaborate as you want. When I think of bake sales, my mind always goes to being a pre-teen/teenager at youth group. We had bake sales all the time to raise money for stuff! Concerts, lock-ins (you’re locked in the church overnight for activities and fun), mission organizations, pretty much anything. You know what a youth group lock-in is, right? The whole youth group, along with youth leaders, are “locked-in” to the church basically to pig out on junk food, play games, and have the occasional Bible study. Fun times. 🙂 Baking was one of the first things I ever learned how to make in the kitchen and I’m sure it was for a bake sale! I remember bolting to the narthex as soon as church was done to take my station behind the bake sale table. Squares of brownies and muffins were all lined up packaged in loose, wrinkled plastic wrap. And you know what, most of the time we were sold out in the end! I have to say, God bless those little old ladies – they always bought our baked goods despite how they looked! Nothing made without a boxed mix, some stuff was even store bought at the last minute, and without fail they would be there supporting us. They rock. These Bake Sale Chocolate Chip Muffins are sweet, pretty, and easy to sell! Splurge for the sanding sugar on top (it’s actually pretty cheap) because it makes them look like they came from the bakery. So yummy with coffee! Bake Sale Chocolate Chip Muffins makes 2 dozen muffins 4 cups flour 1 cup sugar 2 tablespoons baking powder 1 teaspoon salt 12 oz package miniature chocolate chips 1 1/2 cups milk 2/3 cup vegetable oil 2 eggs 1/2 cup sanding sugar Line two 12-cup muffin tins with paper liners and spray the liners with cooking spray. In a large mixing bowl, stir together flour, sugar, baking powder, salt, and chocolate chips. In a smaller bowl, whisk together milk, oil and eggs. Pour wet ingredients into the dry ingredients and stir until batter is moistened, but will still be lumpy. Divide batter evenly among muffin cups. Sprinkle the tops generously with sanding sugar. Bake at 400 degrees for 20 to 25 minutes. I love that this recipe makes 2 dozen, it would be perfect if you were hosting a brunch or a get-together as well!
