With mozzarella and chopped pepperoni in each bite, yum! Our family absolutely loves anything pizza flavored, how about yours? When I told my husband I’d be making these Pizza Muffins he asked if I was making a second batch for after school for the kids. Meaning, he knew he’d take care of the first batch all on his own! I really love how this one-bowl recipe really takes minutes to put together. Less dishes, less mess! There’s mozzarella cheese, Parmesan cheese, tomato sauce, and chopped pepperoni in this savory muffin batter. You and your family won’t be able to resist these delish pizza muffins! How many muffins does this recipe make? This recipe makes about 18 muffins. Does this recipe double well? I recommend just making up one batch, and while those muffins are baking, mixing up another batch. The liquid to dry ingredient ratio can be tricky with muffin recipes! Can pizza muffins be frozen? Yes! Freeze baked and cooled muffins in ziploc bags and allow to thaw/heat in the microwave when ready to eat. How to make pizza muffins: In a large mixing bowl, add flours, baking soda, seasoning, tomato sauce, milk, oil, and egg. Then add in chopped pepperoni, mozzarella, and Parmesan cheese. Mix batter well until all ingredients are incorporated. Divide batter among 18 muffin cups. Bake, cool, and serve with warmed marinara or pizza sauce. Should pizza muffins be served with marinara or pizza sauce? We preferred these with warmed pizza sauce, but marinara would work well too – it’s just a bit thinner than pizza sauce. Use what your family likes better! Can these be made into mini muffins? No, it’s not recommended to make these into mini muffins due to the large pieces of chopped pepperoni in the batter.
