No baking needed, just mix, chill, and serve. Perfect for tucking into lunch boxes or on road trips! Granola bars are such a great snack to have in the pantry. I don’t know about your family, but it’s absolutely a MUST around here to have granola bars on hand. I have been known to buy those giant boxes at Costco just to make sure we don’t run out! Making your own Homemade Granola Bars are just so simple, I always wonder why I don’t make these more often. These are soft and chewy and absolutely the BEST granola bars you can eat. There’s just so much to feel good about serving these to your family – mainly because you know every ingredient that goes into them. It’s truly a win-win! What’s in this recipe? Besides pantry staple ingredients like old fashioned oats, honey, peanut butter, and chocolate chips, you’ll also need coconut oil. I tend to keep a small jar in my pantry and depend on the time of year it will be solid or liquid. It will work wonderfully in this recipe in either condition! Are old fashioned oats the same as rolled oats? Yes! These are the same, though they might be named differently on the canister depending on the brand you pick up. Can I substitute quick oats in this recipe? No, you’ll need the old fashioned oats. Quick oats would make the granola bars way too mushy and would most likely not hold together much at all. Do these need to be baked in the oven? Nope! The only cooking you’ll need to do is microwaving the wet ingredients for a short amount of time. You can do this on the stove top as well if that’s your preference. How to make this recipe: Place the coconut oil, creamy peanut butter, and honey in a microwave safe mixing bowl. Microwave at 30 second intervals until the coconut oil is completely melted. Whisk the ingredients well and set the bowl aside to cool for about 10 minutes. You want to be sure to cool this mixture so that it doesn’t melt the chocolate chips later on. 2. In a large mixing bowl, add in the old fashioned oats and the miniature chocolate chips. You can use regular sized chocolate chips instead if that’s what you have on hand. 3. Carefully pour the cooled coconut oil mixture over the oats and chocolate chips. Working quickly, gently stir the mixture together to make sure all of the ingredients are coated well. It should be gooey and sticky – this step is great for the kiddos to lend a hand! 4. Transfer this mixture into a square baking dish. Using the spatula, press the mixture down firmly into the dish. Place the dish in the refrigerator for about an hour to cool and firm up. 5. Slice the granola bars into strips or bars and wrap them in wax paper. These store great in the fridge for the family to take on the go as needed! How long are these homemade granola bars good for? These keep well in the refrigerator for one week, or you can freeze them for up to three months. Recipe pro tips: DO NOT SKIP the cooling part! Otherwise the chocolate chips will melt and you’ll have no actual chocolate chips in the granola bars. But if you do, they will still taste fantastic! Swap out the chocolate chips for white chocolate chips, raisins, peanuts, dried cranberries, etc. Just use the same amount as listed on the recipe and be creative! These are homemade without preservatives to keep them on the shelf, like store-bought granola bars. So these will soften a lot if left out! Be sure to store them in the fridge or in a lunch box with an ice pack. I am going off processed foods in October so this would be perfect especially if I can freeze them and not have to make them as often. Also they are really really delicious! I made them with homemade peanut butter (just peanuts and oil) and I am pleasantly surprised that it is so tasty! 🙂 Reply
