The perfect lunchbox or afterschool snack! We are huge readers in this house. Ok, well Paul and I are and the kids come along for the ride most days. Ha! It’s not that they don’t like reading, in fact they get upset if something happens and we really don’t have time to read stories at night like usual. It’s more that they just don’t feel like stopping whatever they’re playing with during the day to read. I think with Silas, because he’s just beginning to learn how to read and sound out words, he gets annoyed with me because I purposefully blank out words while I read so he has to help the story along. They really drilled it into them in Kindergarten this past school year, and I’m happy they did! He went in September only knowing under 10 words, and by the end he had mastered all of the required Kindergarten level reading lists and was in the top reading group in his class. What can I say, the kid just likes playing more than reading! He actually lucked out a bit this summer. Just as soon as school was out, I was trucking them back and forth to the library multiple times each week to participate in their summer reading program. His elementary school also had a summer lending library open where we could check out weekly book bags of leveled readers for him to practice. Middle of July rolled around and let’s just say it’s not easy for me to get them to the library and back each week. This baby is getting heavy!! Let’s just say he hasn’t filled out much on the reading log in the past two weeks… One of our favorite breakfasts around here is Rice Krispies and these yummy Rice Krispies Peanut Butter Granola Bars are very easy to put together, virtually no cooking time, and a great alternative to store bought treats to tuck into your kiddo’s lunch boxes. Feel free to change up the raisins and chocolate candies to things your kids like more: peanuts, white chocolate chips, dried cranberries, etc. My kids seriously went NUTS for these bars – yum!! Remove from heat and stir in peanut butter until smooth.Pour mixture over cereal and stir to coat ingredients evenly. Press into a greased 9 x 13 dish and allow to cool completely.Cut into bars, store leftovers in wax paper in the refrigerator.
