17Dec2012 Oatmeal Peanut Butter Chocolate Chip Cookies I’ve never been a fan of those plain peanut butter cookies everyone always raves about. I love PB&J sandwiches and I’m totally addicted to Reese’s cups, but I’ve never been huge into peanut butter cookies. Paul, on the other hand, is obsessed with them. So I went on the hunt for a peanut butter cookie that had something mixed in for me. These were so good! I liked them so much, I actually made a second batch right away and stuck them in the freezer for my cookie trays. Yum! Oatmeal Peanut Butter Chocolate Chip Cookies makes 3-4 dozen cookies 1/2 cup butter, softened 3/4 cup sugar 3/4 cup brown sugar 3/4 cup peanut butter 1 egg 1 teaspoon vanilla extract 1 cup flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup quick oats 1 cup semi sweet chocolate chips In a mixer, cream together butter, sugars, and peanut butter. Add in egg and vanilla on medium speed. In a separate bowl, sift together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients until fully mixed. Stir in oats and chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Flatten with a glass dipped in flour, or a fork in a criss-cross pattern if desired. Bake at 375 for 6-9 minutes, until edges begin to brown. Cool on wire racks.
