It’s our family favorite baked oatmeal with a twist! Have your kiddos started back to school yet? If they haven’t, I’m sure they will in the next week or two. I was in the store yesterday chuckling as I was listening to a mom on the phone with her husband asking him to hurry home and read to her the back to school list she inadvertently left on the counter. That is me as a mom to a T – wonderful intentions, poor execution! It’s no wonder she forgot the actual list back at home, with all the other things she has to remember this time of year – am I right?! Our boys just started back to school this past Tuesday, and I have to say, I’m loving it so far. I premade sandwiches for the week and have them ready in the fridge: ham & cheese for Silas, and tunafish for Wesley. I’m not sure if it’s adrenaline or the new routine or what, but I’ve been naturally waking up between 6:00 am and 6:30 am every day. That time of the morning is wonderful! It’s so quiet, everyone is still asleep. The coffee gets started first and I put their lunchboxes together while the coffee is brewing. Then I figure out what to make for breakfast. I’m sure every morning during the school year won’t be as peaceful as this week has been, but I really feel like getting back into a regular daily routine will be great for all of us. This Raisin Apple Amish Baked Oatmeal is such a perfect breakfast to get in the oven just as everyone is waking up. I think the wonderful autumn smell wafting through their rooms will get them moving in no time! We live here in Amish Country, PA and I love sharing some of my favorite recipes that started as a classic Amish recipe, adapted to my family’s tastes.
