19Apr2013Avocado Hummus1.5K I don’t know about you, but we are HUGE dip lovers in our family. So much so that every once in a while we have a “dip dinner” night! But of course, lots of dips I’ve come across (and have loved, admittedly) are mostly mayo or sour cream, or both. Not exactly what you want your kids eating all the time. This white bean hummus was such a tasty dip, it called for a dip dinner night! Avocado, cannellini beans, garlic, fresh veggies – and the kids gobbled it up. With mere minutes to prepare, what a great, healthier choice for your next party too. Avocado Hummus adapted from Food Network 1 medium avocado 15oz can cannellini beans 1/2 cup fresh parsley 1 lemon 1-2 cloves garlic Peel, seed, and chop avocado and place in the bowl of a food processor. Drain and rinse beans and add to the bowl. Drop in chopped fresh parsley and garlic. Juice the lemon and add the juice to the food processor. Pulse until all ingredients are well combined and hummus is thick and creamy. Serve with triscuits or fresh veggies. YUM!! Don’t miss another Semi Homemade Mom recipe!
