No tahini needed for this easy and delicious dip! Perfect for a last minute party appetizer! If you and your family are big fans of hummus, like mine is, then this quick recipe for Avocado Hummus will be a big hit at your house! This recipe truly takes about 5 minutes to put together, which is perfect for a last minute snack or to bring to a party to share with friends. Leave time for the hummus to refrigerate if you can to allow the flavors to really combine. It’s honestly not necessary though, and I can personally attest to it’s yummy-ness served directly out of the food processor bowl (remove the blade first, of course)!! What’s in this recipe? Literally 5 ingredients!! Well, 5 ingredients plus salt if that’s what your taste buds are telling you. A ripe avocado, a can of cannelini beans (or other white beans you like), two peeled garlic cloves, one lemon, and some fresh parsley. You may need a tablespoon or two of water to thin out the hummus to the right consistency as well. Can this recipe be doubled? Absolutely! It’s a great way to make a larger amount for a party or get together with family. How to make this recipe: Drain and rinse the cannelini beans. Transfer them to the bowl of a food processor or blender. Rinse the fresh parsley and add that in as well. 2. Slice the avocado in half, remove the pit, and scoop out the avocado into the bowl. Add in the peeled garlic cloves and lemon juice. Be sure to remove any lemon seeds that may accidentally fall into the bowl! 3. Put the lid on the bowl and pulse until somewhat smooth. Remove the lid and scrape down the sides. If it seems a bit too thick, add a tablespoon or two of water. Pulse again until the hummus is smooth. 4. Taste the hummus and add 1/4 teaspoon – 1/2 teaspoon of salt as needed. Serve the hummus with various vegetables and pita chips for dipping! What does avocado hummus taste like? It has a more smoother, buttery flavor than typical hummus. Its really, really good!! Storage directions: Place the hummus in a lidded plastic container and refrigerate for up to 3 days. Can this recipe be frozen? No, the texture would change due to freezing and thawing. Can frozen avocado be used instead of fresh? Sure! Just thaw the frozen avocado according to the package directions and proceed from there.
