Avocado muffins are the perfect way to use up a couple spare avocados that are ripe and on your counter! Plus, these delicious muffins have just the right amount of chocolate chips in them. With the fun light green hue, this are a kid favorite! How many avocados do I need for this recipe? About 1 1/2 avocados are needed, depending on the size of the avocados you have on hand. When is an avocado ripe? This can be tricky! Generally, you should be able to press gently on the avocado and it should give slightly. If it’s too hard then it’s not quite ripe yet. Tips on how to make avocado muffins: Lightly mash the avocado ahead of time before adding it to the stand mixer bowl. Gradually add the dry ingredients to the wet ingredients. DO NOT overmix! Turn your mixer speed on low and stop when the ingredients are just combined. Use either paper cupcake/muffin liners, or spray the muffin tin well with non stick spray to release muffins easily. How long do these avocado muffins store? Keep them covered and refrigerated and they should keep well for a week. Can these muffins be frozen? Absolutely! In fact, if you are lucky enough to come across a great deal on avocados at the store, make a few batches of this recipe and wrap and freeze them. They reheat great from frozen in the microwave. Heather Strouse says October 17, 2018 at 12:53 am OK I came across this recipe on Pinterest in search of “Avocado Desserts” and I must say … I have never written a blogger before but I had to come on here and tell you that these are the most simple, quick, and easy delicious muffins I have ever made! I am not a huge fan of avocado outside of guacamole but I always try to incorporate it because I’m somewhat health conscious so putting it into a muffin … Amazing!!
