Buttermilk Banana Bread By Kelly Miller • May4,2022 • 10 Comments 826 Jump to Recipe Jump to Video A Buttermilk Banana Bread recipe made with applesauce, bananas, flour, sugar, eggs, and chocolate chips. An upgrade to your normal banana bread recipe that you just have to try for yourself! There is just nothing as welcoming as a warm loaf of Buttermilk Banana Bread cooling on the counter after a long day at school or work. My family can certainly attest to that! This banana bread is the perfect snack. The buttermilk in this recipe just elevates the richness of the ingredients. It also make it a bit more dense than usual banana bread – which is absolutely irresistible. This is definitely a recipe you need to try with your family! What’s in this recipe? You’ll need the typical banana bread ingredients for this one! Specifically over ripe bananas (almost all black is what I aim for), flour, sugar, chunky applesauce, eggs, and miniature chocolate chips. There is no butter or oil in this recipe and you won’t miss it at all! The chunky applesauce works the same way the oil would work in the bread, and I actually think it enhances the flavor even more. Can I substitute the buttermilk in this recipe? Yes. In a small bowl, mix 1/3 cup milk with 1 teaspoon vinegar or lemon juice. Let it sit for a few minutes before mixing it in with the rest of the ingredients. Of course, prepared buttermilk would be ideal since it’s the start of the show in this recipe! Can I use regular chocolate chips rather than miniature chocolate chips? Sure! Just use the same amount as listed. The chocolate chips may sink down towards the bottom of the loaf, though. The taste should still be great! Will regular ripe bananas work? Yes, though the over ripe bananas mash easier and are sweeter in flavor. Regular bananas should still work fine. How to make this recipe: Place the over ripe bananas in a mixing bowl. Mash with the back of a fork (I like to use my potato masher). The bananas should be still a bit lumpy. 2. After the bananas are mashed, add in the chunky applesauce, buttermilk, and eggs. Mix well with a rubber spatula to incorporate all the ingredients well. Set this bowl aside for a few minutes. 3. In a separate, larger mixing bowl, combine the flour, sugar, baking soda, and salt. Stir this well to make sure the ingredients are mixed. 4. Pour the banana mixture into the bowl with the flour mixture. Using a rubber spatula, stir these together well. Be sure to scrape the sides and the bottom of the bowl to make sure all of the dry ingredients are moistened. 5. Stir in the miniature chocolate chips. They should be fairly well incorporated throughout the batter evenly. 5. Grab a 9 x 5 inch loaf pan and spray it generously with non stick spray. You could use butter to do this as well. Pour the banana bread batter evenly into the greased loaf pan. 6. Bake at 325 degrees for 1 hour. Check to make sure the banana bread is cooked through by inserting a skewer, or a thin knife, into the center of the bread. If it comes out mostly clean, it’s done! Allow the bread to cool completely before slicing and serving. It will smell wonderful so this is so hard to do! Storing the bread: Be sure to wrap the bread in foil or plastic wrap. Keep it in the refrigerator between servings and be sure to use it within three days. Freezer directions: This buttermilk banana bread freezes so well! Wrap the loaf in plastic wrap or foil, place in a plastic freezer bag, and freeze up to 3 months. Thaw the bread in the refrigerator overnight before serving.
