Such a simple and easy dessert to make any time of the year! Last year we started a small raised bed of strawberry plants and ever since then I’ve been stockpiling my favorite strawberry recipes to use with those delicious home grown strawberries! Whether you have backyard strawberries, or like to go strawberry picking in the summer with your family, this dessert can’t get more simple to make. This recipe easily doubles to make in a long, 9 x 13 inch baking dish if you need to make it for a crowd. Or double it to use up a lot of those freshly picked strawberries! Either way, have either vanilla ice cream or creamy whipped cream on hand because this Strawberry Cobbler absolutely needs one of those two! Can I use frozen strawberries? Absolutely! Just thaw them in the refrigerator or on the counter prior to using in this recipe. What’s in this recipe? You’ll need a pint of fresh strawberries, hulled and quartered, Bisquick baking mix, sugar, egg, and melted butter. You read that correctly, only five ingredients for this delicious strawberry cobbler! You can certainly use a homemade baking mix in place of the store bought Bisquick if you’d like. I actually have a recipe here for a homemade Bisquick that works wonderfully in this recipe! Of course, optional ingredients for this would be ice cream or whipped cream. But I honestly thing they are not optional – just take my word for it! Does cobbler have a bottom crust? No, a traditional American fruit cobbler has fruit on the bottom and is topped with some kind of sweet dough. In this case, a sweetened baking mix topping. Is cobbler supposed to be gooey? Well, it depends on what type of fruit you’re using! This strawberry cobbler can be slightly gooey due to the strawberries releasing their juices during baking. Place it in the refrigerator if you like the slices to be a bit more solid rather than gooey. Can strawberry cobbler be eaten warm or cold? Either way you prefer! Warm is so good with ice cold vanilla ice cream. If you’re serving it topped with whipped cream, I would refrigerate it prior to serving. How to make this recipe: In a mixing bowl, stir together the Bisquick baking mix and sugar until well combined. 2. Add in the beaten egg. Stir again well to incorporate the egg into the dry ingredients. The mixture should be slightly dry and crumbly. 3. Spray a 8 inch by 8 inch square baking dish with non stick cooking spray. Next, spread the sliced strawberries into the dish. Then, sprinkle the Bisquick mixture evenly over the strawberries. 4. Pour melted butter over top of the crumbled baking mix mixture. It’s okay if it doesn’t moisten all of the baking mix, just let it sit on top and drizzle the butter as evenly as you can. 5. Bake in a preheated oven at 350 degrees for 30 – 40 minutes. The cobbler should be golden brown on top. Allow the cobbler to cool slightly before serving. Recipe pro tips: If you have a lot of strawberries to use up, make up several strawberry cobblers in freezer containers for future desserts. Keep a bag of frozen strawberries on hand for a quick dessert to make in a pinch. Use a combination of strawberries and blueberries if that’s what you have on hand! How long does this strawberry cobbler last? Be sure to use it within 3 days if kept in the refrigerator. Or if you freeze it, it will keep just fine for up to three months. Just thaw it in the refrigerator or warm individual servings in the microwave until desired temperature is reached. Can this be frozen before cooking? No, you’d need to freeze the melted butter and, upon thawing, the butter would take on an slightly different texture. I recommend going ahead and baking this cobbler, allowing it to cool completely, and then freezing this dessert. I host Sunday family dinner most weeks and this is in regular rotation now!! However, tried with a canned pie fruit filling and it was too Too Sweet, so am thinking either ONLY use fresh fruit, or omit sugar from topping if using canned.(summer here, so I been using fresh, haha but will soon have to start experimenting with less sugar/canned fruits as Family expects this dessert now!)
