Cake Mix Rhubarb Cobbler By Kelly Miller • June8,2017 • Updated May 30, 2018 • 9 Comments 1.5K 6 Jump to Recipe This easy rhubarb cobbler made with cake mix is ready in minutes! Fresh rhubarb from your garden is perfect in this simple dessert! The first time I had ever even heard of rhubarb was the first summer Paul and I had moved to Lancaster County. Seriously, the stuff is ALL OVER up here in Amish Country! Pretty much every roadside produce stand I stop at has bunches of rhubarb, very reasonably priced too, I might add. A sweet member of our church congregation gifted us a bunch from their garden so I thought it was about time that I cooked up something with it myself. Boy am I glad I took the plunge! Rhubarb cobbler with yellow cake mix: Using yellow cake mix in cobbler recipes is SO GOOD! Do not get confused with the cake mix part, just ignore the additional ingredients and instructions on the back of the cake mix box – you’re just going to use it DRY in this recipe. TRUST ME on this! This simple, easy rhubarb cobbler is absolutely delicious. I will be honest, the finished product in the baking dish is not the prettiest dessert, but stir it up and serve it in bowls – one taste and no one will care! The sweet cake mix and jello mix paired with the tangy rhubarb make this dessert fantastic! If you liked this Cake Mix Rhubarb Cobbler recipe, please give it a rating and a comment below!
