White cake mix, strawberry jello mix, strawberries, and powdered sugar – sweet and delicious! I might make some enemies here, but strawberry jello is sooooo much better than cherry jello! Actually, I’m not really a huge fan of cherry flavored anything so my opinion is pretty skewed. Strawberry Jello Cake combines two of my favorite flavors so I adore this pretty cake! This is a great cake to take to a cookout this summer, or even a bridal or baby shower. I just love that pink color inside! And the sprinkled powdered sugar on top makes it extra pretty. Is this a jello poke cake? No, the jello gets mixed right in with the cake batter so the strawberry flavor is throughout the whole cake. Do I need the cake mix ingredients also? Nope, just use the dry cake mix and jello mix and follow the recipe below! Can I use fresh strawberries instead of frozen strawberries? Yes! Just mash them slightly with a fork before adding them to the cake batter and mixing with the hand mixer. How to make strawberry jello cake: Add cake mix, strawberry jello mix, water, oil, and eggs in a bowl and beat with a hand mixer. Add thawed strawberries to batter and beat again with the mixer until well incorporated. Pour batter into a greased baking dish and bake until cake tester comes out clean. Sprinkle powdered sugar over top of cooled cake. Can this cake be frozen? Absolutely! Just wrap tightly before freezing. Unwrap and warm in the microwave when ready to eat. Why powdered sugar instead of frosting? This cake is sweet all on its own – no need for frosting! The powdered sugar gives just a touch more sweetness and decorates the cake a bit as well, but isn’t totally needed either. I don’t have a sifter. How can I sprinkle the powdered sugar evenly? You can use any kind of mesh strainer (they sell them at the dollar store) instead of a sifter. You could even cut out shapes in paper, lay them on the cake, and sprinkle the powdered sugar by hand leaving fun shapes on the cake when the paper is removed – like a stencil. Get creative! Shane says May 2, 2021 at 1:40 pm This was absolutely the best cake I have ever had or baked! I changed a couple of things that may have made it even more amazing. I used 3 eggs instead of 4 and added about a half cup of lite vanilla yogurt. It was extremely moist but held together like a brownie. The powdered sugar was more than enough for a topping.
