Southwest Chicken Wraps By Kelly Miller • January17,2013 • Updated April 10, 2018 • 23 Comments135.5K253 Chunks of grilled chicken strips and dry cole slaw mix, tossed with chili powder, lime juice, ranch dressing, cheddar cheese, and tomatoes! These chicken wraps couldn’t be easier to put together and are absolutely delish! The combination of the ranch dressing with the seasonings tossed with the tomatoes and chicken really pop with flavor. Seriously, it took 10 minutes TOPS to prepare, but if you have longer I strongly suggest giving it a few hours in the fridge. We ate it immediately, but I had some leftovers the next day and the taste was even better! Southwest Chicken Wraps adapted from It’s Overflowing 2 pkgs (9oz) grilled chicken shortcuts (or 2 cups cooked, shredded chicken) 1 1/2 cups coleslaw (from the bag, not prepared coleslaw) 1 teaspoon chili powder 1 1/2 tablespoons fresh lime juice 1/2 cup ranch dressing 1/2 cup shredded cheddar cheese 1/2 cup grape tomatoes 6 tortillas Roughly chop chicken and place in large mixing bowl. Quarter grape tomatoes and add to the bowl. Mix in coleslaw, chili powder, lime juice, ranch dressing, and cheddar cheese until all ingredients are well incorporated. Cover tightly and refrigerate 2 hours. Serve on warmed tortillas. Makes 6 generously sized wraps. In the mood for wraps? Emily says May 11, 2013 at 3:44 pm When you say coleslaw from a bag, do you mean without mayo – just the cabbage, etc? Thanks! Reply
Kelly Miller says May 11, 2013 at 4:03 pm Yes, just the dry coleslaw mix you get in the produce department. Hope you like it, Emily! Reply
