Such a great lunch or quick dinner idea! There is truly no easier dinner than these delicious Southwest Chicken Wraps! I like to use those pre cooked grilled chicken strips from the grocery store. It’s a fabulous way to use up grilled chicken or leftover rotisserie chicken as well. These wraps are perfect for road trips and picnics. My kiddos like these especially as something different in their lunch boxes. Make up a batch of the filling, keep it in the refrigerator, and the family can quickly make up a wrap or two when they’re ready. What’s in this recipe? For these wraps you’ll need precooked grilled chicken strips, shredded cabbage (like the kind that comes in bags in the produce section for making cole slaw), lime juice chili powder, ranch dressing, shredded cheddar cheese, grape or cherry tomatoes, and flour tortillas. Pretty much any of these ingredients can be swapped for your family’s dietary and taste preference. How many wraps does this recipe make? You’ll get about 6 chicken wraps from this recipe. It can easily be doubled (or more) as needed for larger families or gatherings with friends. One of the many reasons why I love this one! What size flour tortillas are needed? You’ll need the larger burrito sized flour tortillas for these. Of course you could use smaller ones to make smaller wraps and you’ll be able to make more that way. How to make this recipe: Slice the grilled chicken strips into bite sized pieces. Slice the tomatoes in half as well. Place both the chopped chicken and the tomatoes in a large mixing bowl. 2. Add in the shredded cabbage, shredded cheddar cheese, and chili powder. 3. Stir in the ranch dressing and the lime juice making sure all of the ingredients are well coated in the dressing. 4. Spread a generous helping of the chicken mixture into the center of a flour tortilla. Roll it up tightly, slice in the center, and serve! Be sure to keep any leftover filling refrigerated. These wraps are great served with potato chips or even chips and salsa! How long will this keep for in the fridge? Be sure to use up the chicken mixture within 3 days of making the batch. Can these be made up ahead of time? Absolutely! Keep it in the mixing bowl, cover with foil or plastic wrap, and refrigerate. Then, just before serving, fill the flour tortillas and slice.
