Chicken goes in the Crockpot with taco seasoning and ranch seasoning, and then is layered with flour tortillas, ranch dressing, and cheese. Filling and good! Sometimes, it just feels good to make a big casserole dinner for the family, am I right? The best casseroles incorporate lots of flavors all in one bite. This Ranch Chicken Enchilada Casserole is just that – packed with flavor in each bite! While this casserole is pretty simple, you’ll need to plan a bit of time to prepare it since the chicken cooks in a Crockpot before assembling the casserole. Once the chicken is cooked and shredded it takes no time at all to layer the ingredients in a baking dish and throw it in the oven. In fact, if you have a Crockpot with a “keep warm” function, this dinner is ready to make whenever you are! Cover and cook. Shred the cooked chicken with two forks or a hand mixer. 3. Lay 2 flour tortillas in the bottom of a 9 x 13 inch baking dish. Spread half of the chicken over the tortillas. 4. Drizzle half of the ranch dressing and half of the shredded cheese over the casserole. Repeat the layers one more time and bake in the oven. 5. Sprinkle fresh parsley over the finished casserole before slicing and serving. What size flour tortillas are used? You’ll need 8 inch flour tortillas for this recipe.
