Leftover cooked chicken with salsa, black beans, corn, crushed tortilla chips and cheese! This recipe for Mexican Chicken Casserole will be your family’s next favorite go-to dinner! Even better, it uses up leftover chicken you might have in your fridge. I just love recipes that use up ingredients! Keep the rest of the ingredients in the pantry: a can of black beans, a can of corn, a jar of salsa, and taco seasoning. And you’re just about ready to pull this dinner together in a pinch. What’s in this recipe? Do you measure the tortilla chips before or after crushing them? After! I like to get my measuring cup out and hold the whole tortilla chips over the measuring cup, crushing them in my hand, and then allowing the crushed chips to drop into the measuring cup. You could also crush them in a ziploc bag and then measure the crushed chips after that as well. How to make this recipe: In a large deep skillet, combine chicken, black beans, salsa, corn, and taco seasoning. 2. Heat mixture up to boiling and then simmer. 3. Transfer mixture to a glass baking dish. 4. Top with cheese and crushed tortilla chips. Bake. 5. Remove from oven and sprinkle more cheese on top. Bake until cheese is melted. Allow casserole to rest a few minutes before serving! What kind of chicken is used? Any leftover chicken you have! Rotisserie chicken works great in this dish.
