Dinner’s ready in under 20 minutes! Do you ever pick up those bags of frozen chicken and steak strips at the grocery store? We started making salad eating around here more of a priority around here a few months ago, and I like buying those pre-cooked chicken strips for easy lunchbox salads. Paul had mentioned that he wanted to try the steak strips sometime, so I picked them up. And he never ate them. Ha! Please tell me I’m not the only one with this problem! So, this bag of frozen steak strips have been staring at me for months in the freezer and finally I decided to use them myself in this dinner. You could certainly use fresh steak strips in this recipe instead, but I like how quick and easy this was to throw together. Beef has become CRAZY expensive around here, so I like using what I’ve already bought to make a really tasty dinner. I also used sweet mini peppers in this dinner, but feel free to use regular sized bell peppers instead – one red, green, and yellow would be enough.
