Smores Cookies By Kelly Miller • August10,2013 • Updated June 30, 2018 • 17 Comments2.5K413 Sweet graham cracker cookies with gooey marshmallows and topped with melted chocolate! So I’m finally jumping on the smores bandwagon and posting a recipe with chocolate, marshmallows, and graham crackers. It’s not that I don’t like smores, it’s just that I’m REALLY particular about my smores. I’m talking about traditional smores here, of which I’ve eaten a lot of in my lifetime (making me somewhat of an expert :). The perfect smore to me (read: the only smore I will eat) is precisely one graham cracker square, one rectangle of Hershey’s chocolate, one perfectly browned marshmallow, and one cracker square on top. I guess the tricky part is the marshmallow, I will NOT eat a burned marshmallow. Not even one that is browned and blown up, that may have one tiny spec of black burned marshmallow from the person before me. Then they’re always that kid on your youth group camping trip that decides to load up their stick with 8 marshmallows and stick them directly into the fire. Please tell me I’m not the only one who got annoyed at the waste of perfectly good marshmallows!! Then you just sit there eating the chocolate all by itself. Eh… I guess that’s not so bad. 🙂 These cookies though, are both amazing and addictive. Someone on my Christmas list WILL be getting a box full of these this season! Smores Cookies Makes about 3 dozen cookies 1 cup butter, softened 1/2 cup brown sugar 1 egg 1 teaspoon vanilla 1 1/3 cup flour 1 cup graham cracker crumbs 1/8 teaspoon salt 72 miniature marshmallows 3 (1.55 oz) Hershey bars, broken into rectangles In a stand mixer, cream together butter and brown sugar. Add in egg and vanilla, and beat well. Add flour, graham cracker crumbs, and salt and beat on low until dough is well incorporated. Scoop dough by tablespoonfuls, roll into balls, and place onto ungreased cookie sheets. Press your thumb into the center of each ball. Bake cookies at 325 degrees for 10 minutes. Remove from oven and place two miniature marshmallows into the indentations in each of the cookies. Place back into the oven for 3 minutes. Remove from oven and immediately place one rectangle of chocolate on top of each cookie. Let cookies stand for 3 minutes and then spread chocolate over top of the cookies with a butter knife. Gina Kleinworth says August 10, 2013 at 9:42 pm I'm laughing so hard- I too am very picky about my marshmallows- as I like to eat them straight out of the bag in large quantities. 🙂 I'm more of a marshmallow dipped in chocolate & sprinkled with cracker- I like the cracker to not overwhelm.
