Don’t forget the salsa and sour cream topping! When it comes to easy, family friendly dinners, this Taco Pasta recipe is perfect. If your family is as obsessed with taco night as mine is, they are in for a treat with this dinner. Bonus point for how easy and quick it is to prepare – no taco shells or flour tortillas needed! What type of pasta is used in this recipe? I like to use penne pasta for this recipe because it holds the cheese sauce really well. You could substitute for equal amounts of ziti or rotini pasta if that’s what you have on hand. Can Taco Pasta be frozen? Yes! Individual leftover portions can be frozen as well as the entire recipe as a prepared meal for later. This is a great one to double the ingredients, stick one batch in the freezer, and eat one batch that night! How to make Taco Pasta: While pasta is cooking, brown ground beef in a pan. Drain, add taco seasoning and water, and cook until liquid is absorbed (just like you would prepare regular taco meat for tacos). Drain pasta and add cooked meat to pasta. In a saucepan, melt butter and whisk in flour until smooth. Add milk and bring to a boil for 2 minutes. Add cheese and stir until melted. Pour cheese sauce over pasta and meat. Stir in fresh steamed corn. Serve with your favorite taco toppings! Can canned corn be used in this recipe? Yes, substitute a can of drained corn for the bag of steamed corn.
