Cream of Broccoli Soup Recipe (VIDEO) By Kelly Miller • March12,2019 • 2 Comments 923 Jump to Recipe Jump to VideoThis Crockpot Cream of Broccoli Soup recipe is perfect and filling! Chopped onion, broccoli, milk, and soups – don’t forget the cheese on top! I don’t know about your family, but mine gobbles up soup this time of the year! I’m always looking for new, easy soups – just like this Cream of Broccoli Soup recipe. Just saute chopped broccoli and onion for a few minutes, combine it with the remaining ingredients, and let the Crockpot do the rest of the work for you! Is fresh or frozen broccoli used in this recipe? I use a frozen bag of broccoli florets, but you could easily substitute fresh broccoli cuts if you have some that need to be used up. Just follow the same instructions for frozen, adding a few more minutes of saute time. Where can I find evaporated milk in the grocery store? Cans of evaporated milk are typically found in the same aisle as the cake mixes and other baking ingredients. Be sure to grab EVAPORATED milk, NOT sweetened condensed milk – two totally different items even though they are usually right next to each other on the shelf. How to make this Cream of Broccoli Soup recipe: Saute onion and broccoli in water until tender. Transfer to a slow cooker. Add in evaporated milk. Stir in condensed soups. Cover and cook on LOW setting. Remove lid. Add salt and pepper to taste. Stir well and serve hot topped with shredded cheese. What do you serve with this recipe? I like to make a batch of crescent rolls or canned rolls with this recipe. You can’t beat dipping a crusty roll into a hot bowl of cream of broccoli soup on a chilly March day! Can this soup be frozen? Yes! Cooked completely, you can transfer cooled soup into freezer containers. Just thaw in the fridge and heat on the stove for an easy meal.
