Creamy peanut butter, egg, and milk mixed with baking mix and sugar. A perfect breakfast for peanut butter lovers! My boys and husband are obsessed with all things peanut butter! Anytime I hint at something I’m making with peanut butter in it, they all go crazy and have zero patience. These Peanut Butter Pancakes were a total hit, but I’m not surprised at all! The base of this recipe is baking mix that you can pick up from any grocery store. I have a recipe for homemade baking mix if you’re interested, it substitutes perfectly for any recipe that calls for typical baking mix. If you’re in a pinch though, just grab it from the store and you’re ready to whip these up! Can I use crunchy peanut butter instead of creamy? Yes! My family really dislikes crunchy, but it should work just as well in this recipe. How long do you cook pancakes? Over medium heat, about 3 minutes for the first side and then about 2 minutes on the other side. How to make peanut butter pancakes: In a medium bowl, whisk together peanut butter, egg, and milk. Add in baking mix and sugar. Stir until well combined. Cook pancakes on a preheated skillet until bubbles start forming. Flip, and cook on the other side. Repeat with remaining batter. Serve immediately. Do I need to use non stick spray to cook pancakes? Yes! Some recipes skip that direction, but pancakes really need nonstick spray to prevent burning and sticking onto the pan. Reapply the nonstick spray in between each pancake. What is best to top peanut butter pancakes? Honey butter is the BEST with these pancakes! No need to grab the syrup. Just mix 1/4 cup softened butter with 2 tablespoons of honey and spread that on top of your stack of pancakes. SO YUMMY!
