Using flour, sugar, baking powder, salt, milk, eggs, and oil. Grabbing pancake mix for breakfast is cheap, but this is even cheaper – and exponentially more delicious – pancakes for the family! Is there anything more satisfying in the morning than a stack of pancakes with butter and syrup?! I have yet to find one person, and picky kid, who would turn down some pancakes for breakfast. Serve with some traditional maple syrup, or grab some powdered sugar and whipped cream for a fun twist at the table! This recipe works because you already have the ingredients in your kitchen right now to make these! Believe me, I like to add the box of complete pancake mix to my grocery pickup order time and again. It’s just so convenient to have on hand for a quick breakfast – or even dinner! I’m always so impressed with myself when I get it together enough to make up ziploc bags of this mix instead! Especially after the holiday season, when I’m overrun with extra flour and baking ingredients, it’s a win-win to have these at the ready on my shelves. What’s in this recipe? I said it above, but I will say it again to listen up those of you in the back: you already have all of these ingredients in your house! Seriously guys: flour, sugar, baking powder, salt, milk, eggs, and oil. Ok, you might need to pick up some milk if you’re running low like I always am. 🤦 Can I substitute almond milk? Or other dairy free milk? Sure! The resulting pancakes might be a little less rich, but they will still work fine. Can I use a sugar substitute? If your sugar substitute measures the same as table sugar, than it should work the same. I do not recommend substituting with liquid sweeteners as it would throw off the dry to wet ingredients ratio. How to make this recipe: You’ll need to get the wet ingredients combined first. Whisk together the milk, beaten eggs, and oil. I just used my large glass measuring cup for this step. 2. Do the same with the dry ingredients. In a bowl, whisk together the all purpose flour, baking powder, sugar, and salt. This is important because you don’t want to overmix the pancake batter, so the better combined in these first steps the better pancakes you’ll have in the end! 3. Grab a large mixing bowl and transfer the dry ingredient mixture into that. Pour the wet mixture in the bowl as well and whisk well, scraping the sides and the bottom of the bowl. Stop mixing when the batter is wet, but still kind of lumpy. 4. Heat an electric griddle, or a pan on a stove over medium heat. If your pan is non stick, spray with your favorite cooking spray at this point. Using a 1/4 cup measuring cup, scoop batter and drop onto the hot griddle or skillet. 5. Allow the pancakes to cook for 3 – 4 minutes or until you see lots of bubbles come to the surface and the edges are slightly cooked. Carefully, flip the pancakes with a rubber spatula. 6. Cook the pancakes another 2 – 4 minutes on this side before removing them from the griddle. I like to stack them on a large ceramic plate, and invert another ceramic plate over top to keep them warm. Repeat for the remaining pancake batter. Serve the pancakes topped with a pat of butter and a drizzle of maple syrup or pancake table syrup. These are the most delicious pancakes ever! How many pancakes does this recipe make? One batch makes about 16 – 20 pancakes depending on how big your measuring scoop is that you’re using. If you’re making these for a large crowd, this recipe is easily doubled! Can I substitute whole wheat flour? That should be fine, but the pancakes probably won’t rise as much or be as fluffy as they are using all purpose flour.
