With chopped Oreos in the batter and a whole Oreo at the bottom of each mini cheesecake, these are irresistible! This recipe for Mini Oreo Cheesecakes originally appeared on this site back in 2012. Our entire family loves Oreos so it’s no wonder that they’ve been a favorite treat for us ever since! With how popular my Best Ever Mini Cheesecakes are right now, I think you’ll love this twist on the classic favorite. I mean who wouldn’t love Oreos and cheesecake together, am I right?! Do the Oreos at the bottom get soggy? No! Though, they do get slightly soft compared to fresh, crunchy Oreos. The texture is perfect with the cheesecake batter! Can this recipe be doubled? Yes! Just double the ingredients as listed in the recipe card to make 24 mini cheesecakes instead. These would be great for a party! How to make Mini Oreo Cheesecakes: Beat together softened cream cheese, sugar, eggs, and vanilla. Stir in crushed Oreo cookies. Drop a whole Oreo cookie into the bottom of paper lined muffin cups. Top evenly with cheesecake batter. Bake and cool! Can these be frozen? Yes! I recommend wrapping each mini cheesecake individually with plastic wrap and then storing them all together in larger freezer bag or container. Then just thaw in the fridge a few hours before serving.
