This rich, velvety cheesecake is the best you’ll ever have! A New York favorite dessert! This cheesecake is somewhat of a legend in my family. My mom’s recipe (obviously), she was given it by a coworker of hers around 30 years ago. My mom has been diligently making this cheesecake every year around the holidays ever since! There are certain flavors and smells that bring you back to your childhood, and one bite of this cheesecake does exactly that for me. I’m instantly back in our old living room in Northeast Philadelphia, along with various members of our church, for my parent’s annual Open House. They always held their Open House around Christmas time and it was a way to have our church family “drop in” and visit with us, their Pastor and family. My closest friends and their families would come over and stay for what seemed like hours and hours just having fun, playing games, and of course – eating! Geez, those years feel like an eternity ago now. We’re all grown up with our own families and many of us serve in our own churches away from one another. This is one reason I absolutely love Facebook – we can connect with each other, no matter how far apart in miles we are. Yes, I had all of that pop into my head with one bite of cheesecake – ha! One bite of my Mom’s Famous Cheesecake and I’m sure you’d agree – it’s legendary for sure! Feel free to use your own “trick” to prevent the top from cracking, I usually don’t do anything and let it crack away. Life’s too short to worry about that – it tastes great no matter what! Press into the bottom and halfway up the sides of a 9 or 10-inch springform pan. Place pan in freezer.Meanwhile, mix cream cheese, sugar, flour, lemon juice, and lemon juice in the bowl of a stand mixer.Add eggs and egg whites gradually while mixing. Pour in heavy cream and mix until creamy, scraping down sides once.Pour into chilled crust. (To prevent cracking, wrap foil around bottom and sides of pan and place in a baking dish; fill baking dish part way with boiling hot water.)Bake at 450 degrees for 10 minutes. elaine galik says March 3, 2019 at 4:53 pm Hi Kelly…..I just came upon yr “Mom’s Favorite Cheesecake” recipe which so reminds me of my own Mom’s recipe…which I do not have…..but recipe shows 64oz cream cheese/”5″ pkgs total…….but 64 oz wud be “8” pkgs total……Cud you pls email me back to confirm…..Is it really 64oz and therefore 8 pkgs or is it only 40oz total to match the 5 pkgs? (based on 8oz packages) tks SO much. elaine Reply
