Chocolate Caramel Mini Cheesecakes By Kelly Miller • April22,2013 • Updated April 26, 2018 • 14 Comments8.5K62 Sweet chocolate caramel cheesecake with a graham cracker crust and drizzled with more caramel – these are perfect for parties! Ok, so I bribed you over here with some decadent, fudgy, Chocolate Caramel Mini Cheesecakes. I’m thinking it just might have worked… 🙂 Can I share with you something that has been constantly on our hearts in the Miller family? We’re anxiously waiting for something  – a new liver. My father in law is currently on the liver transplant list, and we are so so thankful that he is being looked after by one of the nation’s best hospitals for this surgery. As the weeks and months go by, we know that at any minute that phone could ring for him. I’m sure you can imagine, though, the financial burden is high. Our amazing aunts have set up a fund through Give Forward – 100%  of the money raised goes entirely to medical costs. Would you take a minute and consider making a donation? It means SO much to us! 🙂 Ok, let’s get back to these amazing cheesecakes.  Chocolate… caramel… cheesecake… I mean really, do I need to go on? I didn’t think so. Take these over the top and serve with some vanilla ice cream, oh my word! 🙂 Chocolate Caramel Mini Cheesecakes 3/4 cup graham cracker crumbs 2 tablespoons sugar 2 tablespoons butter, melted 12oz cream cheese (1 1/2 packages), softened 1 1/4 cup milk chocolate chips, divided 2/3 cup sweetened condensed milk 2 tablespoons caramel ice cream topping 1 egg 3 tablespoons unsweetened baking cocoa 1 teaspoon vanilla extract In small bowl, combine graham cracker crumbs, sugar and butter. Line a 12 cup muffin tin with paper liners and press 1 tablespoon of the graham cracker mix into each cup. Sprinkle a few milk chocolate chips over the graham cracker crust. In a medium bowl, beat cream cheese with a hand mixer until creamy. Add in sweetened condensed milk, caramel topping, egg, baking cocoa, and vanilla extract until combined well. Pour 1/4 cup batter into each muffin cup. Bake in preheated oven at 300 degrees for 18-20 minutes. Remove from oven and allow to cool 10 minutes. Sprinkle chocolate chips over top of cheesecakes. Allow to cool completely. Serve with additional caramel topping drizzled over cheesecakes. Refrigerate leftovers. *Recipe found at Cheese Curd in Paradise. So these amazing little cheesecakes are in honor of my father in law, whom my kids affectionately call “Pops.” Probably one of the things that I love most about Pops is his relationship with our boys. They absolutely adore their Pops! Mel says February 27, 2021 at 8:42 pm Hi ladies, I’ve made these mini cheesecakes several times and they’re always a hit. In fact I’m making them as we speak. I put caramel syrup in them the last time and they were just as delicious as the regular ones. I leave it up to my friends and family what they choose to top them with but today I’m putting chocolate chips on some and the others whatever we want. So we’ve got cherry topping and soon to have caramel. Blessings to all. Reply
