This Low Carb Peanut Butter Cheesecake uses my favorite stevia sweetener, Truvia, to add a touch of sweetness in both the batter and the crust. Is there sugar in low carb peanut butter cheesecake? The only sugar present in this recipe is the sugar in the natural peanut butter, which would vary according to which brand you prefer. Is this a no bake recipe? The only baking required in this recipe is for the crust, and only for 10 minutes. Then just fill the crust and refrigerate until the cheesecake is firm! How to make low carb peanut butter cheesecake: Place almond flour, Truvia, and melted butter in a bowl and stir together with a fork. Press into the bottom of a spring form pan and bake for 10 minutes. Cool completely. In a large bowl, beat together the cream cheese, peanut butter, and Truvia. In the bowl of a stand mixer, whip heavy whipping cream on high speed until stiff peaks form (not pictured). Add this whipped cream to the peanut butter batter and beat on low speed until well mixed, scraping down sides as needed. Spread mixture into cooled crust and refrigerate until firm, about 2 hours. How long does the cheesecake take to firm up in the refrigerator? Give it at least 2 hours covered in the fridge, overnight is best. Dartania Begoth says April 14, 2015 at 2:00 am I'd say a lot. Most peanutbutter has loads of carbs unless you get the whipped version. Cream cheese has 1 carb per oz so 16oz in the filling, I'd guess that the average piece has between 8-10 carbs. Its low but definitely not induction friendly… makes me sad… I'm still on induction. 😛 Reply
