I’m a bit nutso with baking during the Christmas season. Sometime before Thanksgiving I get out all my seasonal cookbooks and have my Pinterest boards open, and I start brainstorming all the things I want to bake. And I’m not kidding when I say BAKE.ALL.THE.THINGS. This is a case where, if I actually did completely all I had planned, I’d be still baking sometime in April. But I just love baking this time of year so much! One of the things I love putting together is my baking counter. I absolutely love our little townhouse, but it is seriously lacking in the size of the kitchen – I have very little counter space left. However, I have a small rectangle of space to the right of my refrigerator that is filled with my baking staples: chocolate chips, flour, sugar, brown sugar, baking powder, baking soda, salt, pudding mixes, and cake mixes (you all KNOW how much I love making fun recipes with those shortcuts).This Christmas Cranberry Bread is just absolutely perfect for the holidays. I love how it uses up some jellied cranberry sauce you may have leftover from Thanksgiving and it gives the bread a reddish hue. And the golden raisins bring a greenish-yellow color as well!    This bread is super moist and perfect for breakfast! Stir until just moist, batter will be lumpy. Stir in raisins.Spread into a greased loaf pan. Bake at 350 degrees for 45 minutes or until a cake tester comes out clean.
