As soon as the holidays roll around, I become somewhat eggnog obsessed. Classic eggnog will always be found in our refrigerator during the entire month of December. Most of the time I have an eggnog creamer for my coffee on hand. And, as far as the blog is concerned, I start searching and brainstorming all sorts of eggnog recipes to try and – hopefully – share with all of you! I just love it so much! As a kid, it always reminded me of melted ice cream with a touch of spice. Thankfully Paul shares my obsession as well, because that might have been a deal breaker! Just kidding, ha! I usually serve our eggnog as icy cold as I can get it, and always in our “fancy” winter-themed drink glasses. Personally, I like an extra sprinkle of nutmeg on the top or even some whipped cream. Just the smell of it makes me think of Christmas! This beautiful Eggnog Coffee Cake is the perfect Christmas morning breakfast recipe. It’s also made with a cake mix, so it’s really easy and quick to whip up and stick in the oven, in between all the unwrapping. Oh how I can’t wait for Christmas morning!
