Fresh cranberries, pineapple, whipped cream, and marshmallows – a perfect holiday side dish! This fresh Cranberry Salad is a “salad” in name only as you won’t find anything green in this side dish! This salad is reminiscent of the classic ambrosia salad with the same texture, but a lot more tang thanks to the cranberries. Where can I find fresh cranberries? Fresh cranberries can usually be found at the end of September through Christmas in the produce section of the grocery store. How do I mince the cranberries? I used my food processor, but you could also use a blender if that’s what you have. Either would work just fine! How do I make cranberry salad? Place fresh cranberries in a food processor or blender and pulse until coarsely chopped. Transfer cranberries to a bowl and stir in crushed pineapple. Stir in sugar and Cool Whip. Then stir in miniature marshmallows. Refrigerate at least two hours before serving. Can this cranberry salad be made ahead of time? Yes! It really needs to be refrigerated at least 2 hours for all the flavors to combine well. Overnight is ideal. Can this recipe be frozen? It’s not recommended to freeze this recipe, but it will keep for up to a week in the refrigerator. It’s a perfect idea to make this up earlier in the week when preparing for your Thanksgiving or Christmas dinner! Patricia Oakes says November 16, 2021 at 1:56 am I make this every year, but use heavy whipping cream. I also mix the sugar,cranberries and pineapple and let set overnight in the refrigerator. I also freeze this, it last for several months. Reply
