I absolutely get giddy when I start seeing all the holiday themed baking supplies in stores this time of year. My mind goes wild with recipe ideas – usually crazy involved, fancy ones that I pretty much know I will never get to. Well that’s not true, sometimes I suprise myself and attempt something that takes all day to make, telling myself the whole time that the effort will pay off in the end and I will have an amazing recipe to share with you all. I can tell you that usually it never happens – ha! I’m just such a fan of shortcuts in the kitchen that I feel like there are so many fun things I can make with those – why spend all day cooking or baking? One of my favorite desserts that can be tailored to any holiday or occasion is the almighty poke cake. If you’re not familiar, a poke cake is just a regular cake, poked with holes, and filled with either gelatin or pudding. My favorite filling is pudding by far! It does take a few extra steps to make a poke cake, but I can assure you – it is WELL worth it and it certainly will not take you all day! Wesley took one bite of this cake and asked me if he could have it for his birthday. It’s in July so I’m sure his mind will change a few times until then, though! There are seriously so many cake mix flavors and pudding mix flavors out there that you are really limitless to the variety you can create. This cake will seriously be the hit at your next holiday party – and a total kid favorite for sure! I love that I can easily pick up all my fun holiday baking needs during my weekly Walmart trip! This time of year always gives us the opportunity to give to those less fortunate than ourselves. Our family through our church usually gives money and/or donations to our local food bank that does great work in our community. Pour into a greased 9 x 13 baking dish and bake at 350 for 35 minutes. Cool completely.Poke holes into top of cooled cake. In another bowl, whisk together milk and instant pudding mixes until smooth.Pour evenly over top of cake. Refrigerate 1 hour.Scoop frosting into a microwave safe dish and microwave 30 seconds. Pour evenly over pudding.Top with coconut, M&M's, and frosting decorations. Refrigerate until ready to serve.
