Everyone in my family knows that going out to breakfast is my FAVORITE. I really love breakfast foods and I just love going out in the morning with everyone. We have some amazing restaurants in our area that have breakfast buffets – made omelettes and pancakes to order. It’s so fun and yummy! Last week Paul took me to breakfast before Silas’ (first ever) school conference. We went to an older place in our area that was new to us. Oh man. It was awful. The omelet was overpriced, didn’t include hash browns or anything for that matter, and the mushrooms? From a can. I know GASP! It really stunk. You know what really irked me though? Knowing that I could make breakfast at home that tastes leaps and bounds better. I LOVE being able to say that now! This Banana Walnut French Toast is killer! Way better than anything you’ll find at a diner, I guarantee that! This would also be wonderful for a brunch or holiday breakfast, too. How about you? No ratings yet Print Pin Rate Prep Time: 1 hour hour 20 minutes minutesCook Time: 45 minutes minutes Servings: 6 servings Calories: 779kcal Author: Kelly Miller Ingredients▢ 2 cups brown sugar divided▢ 1/2 French bread loaf sliced▢ 1/2 cup butter melted▢ 1/4 cup maple syrup▢ 3 bananas sliced▢ 1/2 cup walnuts chopped▢ 1/2 teaspoon cinnamon▢ 6 eggs▢ 1 1/2 cups milk▢ 1 teaspoon vanilla InstructionsIn a medium bowl, combine 1 1/2 cups brown sugar, melted butter, and maple syrup.Gently fold in bananas and walnuts.Spread into the bottom of a 9 x 13 baking dish that has been sprayed with non stick spray.Place one layer of bread on top.In a smaller bowl, combine 1/2 cup brown sugar and 1/2 teaspoon cinnamon.Sprinkle half of this mixture over the bread.Add another layer of bread and then the rest of the brown sugar/cinnamon mixture on top.Whisk together eggs and milk.Pour evenly over casserole.Cover tightly with foil and refrigerate for one hour (overnight is best).Remove foil and bake at 325 for 40 - 45 minutes or until casserole is set in the center.Allow casserole to sit 10 minutes before slicing and serving.
