Is it apple season yet? Don’t get me wrong, I absolutely LOVE berry season. Not only are they super cheap at all the stores, they taste fantastic right now. We currently have three boxes of strawberries in the fridge and 8 cups of blueberries in the freezer. The boys inhale strawberries and I love having the frozen blueberries ready for smoothies when school starts again.I am SO READY for apple season, though! This past week we were invited to a BBQ at a friend’s house and I was in charge of dessert. You know what I brought? Two of my Pastor’s Wife Apple Pies. I’m obsessed with apples. But I feel like I say that every year around this time, ha! I would love to take the boys apple picking this year, but with my current track record in heat with this pregnancy, I don’t think it’s in the cards for us unfortunately. Hopefully we’ll be able to score some great deals at local farmer’s markets though and cook up lots of tasty apple treats to share with you! This Raisin Apple French Toast Casserole is the perfect breakfast to prepare when you’re having guests over or you’re celebrating a special day. It takes a little more thought out than a regular breakfast (which in this house is either instant oatmeal or cold cereal), but it’s WELL worth the extra effort. Do yourself a favor and lick the spoon from the cream cheese brown sugar filling AFTER you’ve added it to the dish, otherwise you won’t have much left to add to the casserole!
