Any variety of apples will work well in this recipe. I really love simple dessert cakes like this one. Especially Bundt cake recipes! They make such a pretty presentation for very little extra effort. No need to mess with frosting at all! In fact, this cake is great with or without the dusting of powdered sugar. Less fuss and less mess, with the same delicious result! What’s in this recipe? Honestly, just the regular cake ingredients you most likely already have in your pantry. Plus, peeled and chopped apples, of course! You’ll want to chop those apples in smaller one-inch pieces to make sure they don’t all sink to the bottom of the cake. What kind of apples are used? Any! Really, it truly doesn’t matter what kind of apples you use. I tend to make recipes like these when I notice there’s a few apples left from the bag that no one is eating just sitting there in the fruit bowl! What makes a pound cake different? Pound cakes generally are more dense than a typical light and fluffy cake. It pairs well with a hot cup of coffee or tea and is great served for a brunch or a get-together. What is the secret to a good pound cake? Do not overbake! Grab a wooden skewer and test the cake at the lowest time listed. If it comes out clean, it’s done! Overbaking pound cakes are really the main reason they become to dry and crumbly. How to make this recipe: In a large mixing bowl, stir together the flour, baking soda, salt, and cinnamon. Set the bowl aside. 2. In the bowl of a stand mixer, blend together the sugar, eggs, oil, applesauce, and vanilla extract until smooth and creamy. 3. Gradually add in flour mixture, blending with the stand mixer on low after each addition. Batter will be thick! 4. Remove the bowl from the stand mixer. Gently fold in chopped and peeled apples to the batter. 5. Spread the cake batter into a Bundt pan that has been sprayed with non stick spray. 6. Bake until a cake tester or wooden skewer inserted into the center of the cake comes out clean. Dust with powdered sugar, if desired. Slice and serve! How do I store leftovers of this cake? Due to the moisture content of the apples, it’s recommended to store leftover cake, or individual slices of cake, in the refrigerator. You can reheat slices as needed. Freezer directions: Wrap entire cake, or individual slices of cake, with plastic wrap and freeze for up to 3 months. Thaw overnight in the refrigerator. What can I use instead of a Bundt pan? You can use a long 9 x 13 baking dish instead – it may cook in less time though so keep a close eye on it! Can these be made into muffins? Yes – the batter should make 18-24 muffins. Check for them being done in about 20-30 minutes. Recipe pro tips: Don’t worry if your apples brown after chopping them! This happens naturally, doesn’t change the flavor of them in any way, and you’ll never notice them baked in this cake. Janet Finley says December 23, 2022 at 12:54 am I would increase the spice quite a bit if I made it again. I would also like to suggest listing a size for the bundt pan. I triple checked that after the batter came nearly to the top of my Nordicware wreath pan. I ended with the bundt pan and 6 small loaves. Reply
