Chocolate fudge cake mix with cherry pie filling and topped with a fudge frosting! My Dad faithfully reads every new recipe I post and the flavors in this Cherry Chocolate Cake are his favorite! Don’t worry Dad, I’ll bring you a piece as long as the boys don’t gobble it up first! It always amazes me what incredible desserts can be made starting with just a humble chocolate cake mix. Boxed cake mix and canned frosting was the extent of our desserts at home growing up. I just love all the different creative desserts that can be made to mix it up a bit! Do I need to mix the cake mix ahead of time? No! Use the cake mix dry, ignoring the ingredients/directions on the box. Should the cherry pie filling be drained? No, just stir the entire contents of the can into the cake batter. How can I make this without a Bundt pan? Instead of a Bundt pan or a tube pan, you can use 2 loaf pans – just pay attention to the cake as it’s baking. It might be done before the listed time. How to make Cherry Chocolate Cake: In a bowl, stir together cake mix, cherry pie filling, eggs and vanilla. Spread into a greased Bundt pan and bake. For the frosting, bring sugar, butter, and milk to a boil in a saucepan. Stir in chocolate chips until melted and smooth. Drizzle frosting over cooled cake. Slice and serve. Can other fruit pie filling be used instead of cherry? I’m not sure, but it would be fantastic to try! Does this cake freeze well? Yes! Wrap tightly and freeze unfrosted cake. Thaw and proceed with frosting over room temperature cake.
