Perfect as a holiday side dish that frees up oven space! My all time favorite holiday side dish is sweet potato casserole and I’m not quite sure why, but it never occurred to me before to try making it in the Crockpot. So I tried it and… it worked out perfectly!! Not only does it free up valuable oven space during a Thanksgiving or Christmas dinner, but there’s no need to boil the sweet potatoes ahead of time – so less dishes! That is a completely winner of a recipe if you ask me! What’s in this recipe? Fresh sweet potatoes, butter, brown sugar, and miniature marshmallows. Do I have to use miniature marshmallows? Nope, that’s totally optional! Just skip that step at the very end and they’ll be just as tasty. Can I used canned yams or canned sweet potatoes? No, you’ll need fresh sweet potatoes because these are cooking for 4-8 hours. If you used canned yams that are already cooked, they would be too mushy in the end. Are sweet potatoes the same as yams? Yep, they are the same just different varieties! Use the variety you are most used to eating and I’m sure this recipe will turn out to be a hit for your family! How to easily peel and chop sweet potatoes: Wash and dry the sweet potatoes. Use a clean vegetable peeler to peel the skin (throw these away or compost them). Use a sharp, non serrated knife to slice the sweet potatoes and then halve or quarter the slices. How to make this recipe: Peel and chop the sweet potatoes into large, 2-inch pieces and place them in a Crockpot. 2. Stir in the brown sugar and melted butter. Cover and cook. 3. Remove lid and sprinkle miniature marshmallows on top. Cover and cook until marshmallows are melted, only about 5-10 minutes. Transfer casserole to a serving dish, or better yet – just serve it directly out of the Crockpot! I wish you could taste this deliciousness! The brown sugar and butter just melt and coat every piece of sweet potato. The miniature marshmallows are sweet and gooey and are just the perfect compliment to the sweet potatoes as well. Seriously, you will have to put this on your holiday menu plan this year. You know for sure it’s on mine, my family is counting on it!! How many sweet potatoes are needed? You’ll need 6 large sweet potatoes, around 4 – 5 lbs. Does this recipe freeze well? Leftover sweet potato casserole can be frozen for up to 3 months. Just put it in a freezer safe container with a lid. Can this be frozen before cooking? No, the sweet potatoes shouldn’t be frozen before cooking as it would change the texture of the sweet potatoes. How can I make this not in a Crockpot? I have this exact recipe, just baked in a casserole dish!
