Taco meat, layered with macaroni and cheese, and then topped with salsa and shredded cheese. Filling and absolutely delicious! We have been in LOVE with this Taco Mac Casserole in our family for years. In fact, I used to make this for just me and my husband when we were first married! It is absolutely amazing how a bit of sour cream mixed into boxed macaroni and cheese completely transforms the flavor. It is the perfect base for a taco casserole. You simply cannot go wrong serving this for dinner… any night of the week! What’s in this recipe? How to make this recipe: Brown ground beef in a skillet, drain, and return to the pan. Add taco seasoning and water and simmer until all liquid is absorbed. 2. In a different pan, cook macaroni and cheese according to package directions. 3. Remove macaroni and cheese from heat and stir in sour cream. 4. Spread half of the macaroni and cheese mixture into the bottom of a glass baking dish. Top with taco meat. 5. Sprinkle some shredded cheese over the taco meat and spread the remaining macaroni cheese over the top. 6. Cover with foil and bake. 7. Remove foil, spread salsa and remaining cheese over top of casserole, and bake once more until hot and ready. I wish you could smell this through the screen, yum!! I make ahead up to putting the last layer of mac n cheese, then cover and place in fridge to let the flavors mingle. Take out a half hour prior to cooking to bring to room temperature, then cook as directed. So easy, quick and totally yummy! Leftovers taste even better the next day! Win-win! Reply

Sharon S Thompson says August 23, 2023 at 2:17 am I am 1 wk out from hip replacement. I actually made this with 2 boxes of shells and cheese. I mixed all together which was easier for me. Also, did not want to heat up the kitchen. It worked well as a stove top meal. 👍 Reply
