Rice Krispie treats made with creamy peanut butter and then topped with melted chocolate and butterscotch chips! I had never actually heard of Scotcheroos before I spotted a recipe in an old cookbook. My entire family is obsessed with Rice Krispies treats and peanut butter, so I knew these would be a hit if they turned out well. And OH BOY did these turn out well! While this recipe includes a few more steps than classic krispie treats, it’s really not much more effort for a really deluxe dessert bar that’s perfect for parties or wrapped on on holiday cookie trays. These Scotcharoos will always be on our cookie list during Christmas from now on! What are scotcheroos? Scotcheroos are cereal treat bars mixed with peanut butter and then topped with melted chocolate and butterscotch chips. How long do they keep for? Keep these in a sealed container (use a sheet of wax paper if you need to layer them) at room temperature for 3 days. Can scotcharoos be frozen? Yes! Seal them well and they can be frozen for up to 6 weeks – what a great way to get started on your holiday treats ahead of time! How to make scotcheroos: In a large pot, heat sugar and light corn syrup until bubbling. Remove from heat and stir in peanut butter until smooth. Stir in Rice Krispies, turning to coat cereal well. Press into a pan that has been sprayed with non stick spray. In a small pot, melt chocolate chips and butterscotch chips over LOW heat while stirring continuously. Spread evenly onto treats in pan. Allow to cool completely at room temperature before slicing and serving. Pro tips for making scotcheroos: Spray the spatula with non stick spray before adding the cereal to the pot Spray the spatula again with non stick spray before pressing the cereal treats into the pan Melt the chocolate and butterscotch chips on the LOWEST setting you can Instead of melting the chocolate on the stovetop, you could try using the microwave at small intervals until melted Do these have a strong butterscotch flavor? Not exactly! The peanut butter and chocolate flavors overtake the butterscotch, it’s more of an after flavor when you take a bite!
