We’re still dealing with high humid temps in the high 80’s to mid- 90’s. I’m so ready for fall here! Luckily, this easy soup takes little effort to pull together. I like picking up cubed cooked ham at the grocery store in the deli section, but you can easily use leftover holiday ham in this recipe if that’s what you have. Even more flavor for this delicious soup, I’m sure! Do the navy beans need to soak overnight? Canned navy beans are used in this recipe, so no soaking is needed for preparation! How do you thicken navy bean soup? In this particular recipe, we’re using instant mashed potato flakes to both thicken up the soup and give it a much heartier flavor. You’re going to love it! Plus, I think most of us have a box of instant mashed potatoes hanging around in the pantry – it can’t just be me! How to make Navy Bean Soup: Melt butter in a large stockpot. Add onions and saute until beginning to brown. Add in water, chicken bouillon cubes, and ham. Bring to a boil, then simmer. Stir in instant mashed potato flakes, onion powder, garlic powder, and navy beans. Bring to a boil again, then simmer until thickened. Serve hot sprinkled with dried parsley if desired. One thing I absolutely LOVE about this soup is that it makes enough for a crowd! If you’re planning a fall or winter party, maybe for a big football game, this is a great main dish to make and serve. Why are they called navy beans? These small white beans became really popular in the early 20th century because of how often it was served to the US Navy. Can this soup be frozen? Absolutely! This is a great soup to freeze in individual portions for quick meals later in the year.
