The entire family loves this slow cooker dinner! So, are you getting sick of all the slow cooker recipes around here? I hope not! Crockpot season is in full swing, people. And I for one LOVE it. This meal takes a little bit more thought because you need some cooked ground beef, but that’s about all the pre-planning required. Don’t even worry about thawing the tortellini, it goes in frozen – how cool is that?! You also get to sneak in about 2 cups of fresh spinach and I promise, your kids (or husband) won’t know the difference. 🙂 How to make this recipe: First step, brown ground beef in large skillet, drain. Add onion, garlic, and spaghetti sauce. Simmer over medium heat for about 5 minutes, until you really start smelling the garlic. Remove from heat and stir in spinach and ricotta. Spoon 1/3 of the meat sauce on the bottom of slow cooker. Top with 1/2 package of tortellini. Repeat layers, ending with meat sauce on top.
