23Sep2012Apple Cinnamon Rice Pudding I have loved rice pudding ever since I was a little girl! I had never actually tried making it at home before. Who knew it was so easy! I still had a bowl full of honey crisp apples from when we went apple picking a few weeks ago and they were starting to get some brown spots. What a great way to use them up! You can eat this warm, but I like eating rice pudding ICE cold. Maybe it reminds me of the days when my sister and I would eat it straight from the Kozy Shack container in the fridge. 🙂 Apple Cinnamon Rice Pudding adapted from That’s My Home 2 cups cooked rice 3 cups milk 1/2 cup sugar 2 cups peeled and diced apples (about 2-3 medium apples) 1 teaspoon cinnamon (more or less to taste) 1 teaspoon vanilla Combine rice, milk, sugar, and apples in a large pot. Cook over medium high heat until mixture starts bubbling. Reduce heat and simmer for about 30 minutes, stirring occasionally. Once mixture has thickened, remove from heat and stir in vanilla and cinnamon. This is such a special treat to give the kiddos for breakfast! Looking for some more yummy apple recipes?
