This sweet potato pie recipe calls for 1 1/2 cups of mashed sweet potatoes – about three medium sized sweet potatoes. This recipe is a great way to use up sweet potatoes you may have hanging around in your pantry! How do you mash sweet potatoes? Just boil some water in a stock pot and place the potatoes in the boiling water for 20 – 30 minutes or until they are easily pierced with a fork. Then peel and mash! How to make sweet potato pie: Place the mashed potatoes, eggs, sugar, evaporated milk, spices, and vanilla in a mixing bowl. Beat well. Pour filling into a 9 inch pie crust. Bake at 425 for 15 minutes. Then reduce heat to 350 and bake another 15 minutes. In another mixing bowl, blend flour, brown sugar, and cold butter until coarse crumbs form. I had such high praise and many compliments that this pie is absolutely the best ever tasted. This is because the creator of this recipe allowed the sweet potatoes to be the star of the dish.
