Made with boneless skinless chicken breast, oregano, seasoned salt, garlic, chicken broth, lemon juice, and potatoes. This is such a fantastic dinner recipe – Crockpot Lemon Chicken – no side dish needed for this meal! The potatoes cook right along with the chicken in the slow cooker and everything is ready at the same time. Weeknight dinner solved! This meal can easily be set to “keep warm” if you have family members that are coming and going to various activities. I just love dinners that you can do that with. Ask me how I know!! What’s in this recipe? You’ll need boneless skinless chicken breast, potatoes that are washed and quartered (you can peel them also if you want), dried oregano, seasoning salt, pepper, garlic cloves, chicken broth, and lemon juice. You can substitute the chicken breast for chicken thighs if that’s what you have on hand. Can bottled lemon juice be used instead of fresh? Absolutely, I typically use bottled lemon juice in this recipe. Can dried minced garlic be substituted for fresh minced garlic? Sure, just use the equivalent amount as listed on the jar. How to make this recipe: Wash the potatoes well. Cut them into quarters. If they’re larger potatoes, cut them into 2 inch pieces. Add them to the bottom of the slow cooker. Using tongs, place the chicken breasts on top of the potatoes. 2. Sprinkle the dried oregano, seasoning salt, and pepper over top of the chicken. Add the minced garlic – I like to grate the garlic directly over the chicken. 3. Pour the chicken broth and the lemon juice over the chicken. Cover the Crockpot with the lid and cook on low setting for 6 hours or on high setting for 3 hours. 4. Remove lid and check the internal temperature of the chicken with a thermometer to ensure it is at least 165 degrees Fahrenheit. Serve along with the potatoes. Yum! Can frozen chicken be used? Sure, just make time to thaw the chicken first before putting it into the Crockpot. Storing leftovers: Place any leftovers in a plastic container with a lid. Refrigerate for up to 3 days. Reheat individual servings in the microwave until hot. Kelly Miller says July 29, 2013 at 6:02 pm Kim, I've not had success cooking broccoli or green beans in the Crockpot, they get really watery and mushy. I would cook the chicken in the Crockpot, steam/cook the broccoli or green beans, and then toss them in the finished sauce. Let me know how it turns out! Reply
