25Oct2012 Crockpot Honey Mustard Chicken Dinner I feel like I need a disclaimer for every slow cooker recipe I post: “Don’t judge the recipe by the picture.” LOL In general, Crock-Pot** meals just don’t photograph well. At least not often in my kitchen! Eh, sprinkle a little parsley over top and call it a day. I’m obsessed with my Crock-Pot** and judging by the popularity of my 30 One Step Crockpot Meals post, you are too! So here’s another winner to pin. Fantastic flavor, about 10 minutes prep time, and the entire dinner is ready to serve when done — veggies included! Crockpot Honey Mustard Chicken Dinner inspired by Eat At Home Cooks 3-4 boneless, skinless chicken breasts (bone in would work, too) 3 potatoes, washed and quartered 3 carrots, sliced 1/2 cup honey 1/4 cup dijon mustard salt & pepper to taste Spray inside of Crock-Pot** with nonstick spray (this would be a good one to use a liner) and place chicken in the bottom. Spread veggies on top of chicken. In small bowl, mix honey and mustard, pour over top of vegetables. Cook on high 4 hours or low 8 hours. When done, remove veggies and chicken from slow cooker and serve with the extra honey mustard sauce (it’s killer). It looks like the potatoes there are little burnt, they’re not. It’s carmelized honey mustard sauce, YUM! The potatoes and carrots literally melt in your mouth, so good. Looking for more complete meals in the Crockpot?
