I think it’s just cruel that we’re going on the third full day of rain in the first week of summer break. These kids are driving me up the wall! Actually, I think I’m feeling a bit of cabin fever, too. I had planned to get some flowers planted in the front yard, and get started on our vegetable garden in the back yard. There’s also a few farms in our area that are wonderful for strawberry picking. One actually has the strawberries for $1 per pound! Why, why, why??? It’s the type of weather where, yes it’s a bit cooler outside, but it’s humid. So you don’t know whether to crack the windows and turn off the air or leave it on. Everyone around here knows I am NOT a fan of the heat, so you know it must be bad when I say – can it just be summer already?! Oh well, at least it gives me some time to try new things in the kitchen, like this 3 Cheese Breakfast Bake! This was so rich and filling, I know sometimes I scramble 8-10 eggs and everyone is still a bit hungry. I served this with some fruit and the whole family was filled and ready for the day – I’d call that a breakfast success! Of course Silas picked off all the onions, but both kids enjoyed this a lot!
